Stuffed Pork Roast

1 boneless pork roast
3/4 cup green pepper, finely chopped
1 cup onion, finely chopped
3 garlic cloves, minced (I usually use more)
1/2 cup celery, finely chopped
2 tbsp. margarine
1 tsp. salt
1/2 tsp. cayenne pepper (less if you don't like things hot)


Preheat oven to 325 degrees F.

With a sharp knife, cut deep pockets in the roast(not all the way through). Combine all of the ingredients except the salt and pepper.

Fill all the pockets with the vegetable mixture. Season the roast with the salt and pepper. Bake at 325 degrees until the meat thermometer reads 170 degrees.
