Meatloaf with a Hint of Peanut

1 cup milk
2 cups stale bread, crackers, or croutons (or combination of both)
2 lb. ground beef
1/2 cup peanut butter (opt, but makes loaf)
1 cup finely diced carrots
1 medium onion, diced
3 cloves garlic, pressed
1/2 cup chopped parsley
1 tsp. salt (or to taste)
1/2 tsp. pepper
2 tsp. chili powder
1 (6-oz.) can tomato paste
2 tsp. Worcestershire sauce
Splash of red wine
6 to 10 fresh mushrooms


Preheat oven to 350.

Soak bread, crackers, or croutons in milk in large mixing bowl. Add remaining ingredients, except mushrooms. Mix, preferably with hands.

Form long loaf in 9x13-inch baking dish (or two smaller ones). Trim ends of mushrooms and press, stem first, into top of loaf.

Bake for 1-1/2 hours.
