Ravioli Dough

Ravioli Dough 
  
3 c flour 
1/4 tsp salt 
2 eggs 
1/3 c water 

  Stir flour and salt together. Form a well in center. Add eggs and blend 
with flour. Stir in enough water to form very stiff dough. Turn out onto 
lightly floured work surface. knead until dough is smoothe and elastic, 
about 10 min. Cover and let rest for 10 minutes. 

  Cheese Filling: 
  2 c ricotta cheese 
  2 eggs 
  3/4 c parmesan cheese 
  pinch of nutmeg and pepper 

  Mix above well. 


  Meat Filling: 
  3/4 lb ground beef or your favorite mix of pork, beef, veal etc 
  1/4 c bread crumbs 
  2 tbs grated parmesan 
  1 egg 
  1 tbs parsley 
  1/2 tsp garlic salt 
  1/4 tsp pepr 

  Combine and mix well. Refrigerate until ready to use.
