Calzones from Heaven

1 lb. fresh Italina sausage, hot, removed from casing
1 small white onion, peeled and julienned
1 small green bell pepper, seeded & julienned
1 small red bell peper, seeded & julienned
1/2 lb. portobello or other mushrooms, chopped
1/8 to 1/4 cup red wine (such as Merlot, Bordeaux, or Cabarnet Sauvignon)
2 tbsp. chopped fresh garlic
4 oz. Ricotta cheese
8 oz. Mozzarella cheese
8 oz. Parmigiano-Reggiano cheese, grated
6 oz. Asiago or Pecorino Romano cheese, grated
Pinch of crushed ped pepper flakes
4 individual pizza dough rounds (6 inch)


Preheat oven to 375 degrees. In a saute pan ove medium heat, add 1 tbsp. olive oil. When hot, add sausage and brown 6 to 7 minutes. Remove from heat and drain and cool completely.
In another saute pan, medium heat, add 1 tbsp. oil. Add the onions, peppers and mushrooms. Add wine when mushrooms start to sweat. Season with salt, pepper and Italian seasonings. (basil, oregano, and parsley) Saute 4 minutes. Add galic and remove from heat. Cool completely.

In a mixing bowl, combine the sausage, onion, pepper, mushroom mixture, cheeses and crushed red pepper. , Mix well. Season again with salt. Use a fork to dock each round of pizza dough. Divide the mixture into fourths and place in the center of each round. Fold one end over to form a half-moon shape. Using a fork or fingers, press the ends together , sealing the calzones completely.

Place them on a baking sheet lined with parchment paper. )I usually take a little olive oil and Parmesan and brush them lightly. Lightly or they won't get the right texture) Bake until golden brown, about 25 minutes.
