Carrot Cake

2 cups flour
2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 cups finely shredded carrots
1 cup cooking oil
4 eggs
cream cheese frosting


Preheat to 325.

Stir the dry ingredients together in a large mixing bowl. Add carrots, oil and eggs, and mix until moistened. Then beat for 2 minutes at medium on an electric mixer.

Pour into greased and floured 13x9x2 cake pan. Bake for 50 to 60 minutes. Cool completely before



Cream Cheese Frosting:
3 ozs. cream cheese
1/4 cup butter or margarine
2 cups sifted powdered sugar
1 tsp. vanilla
1/4 cup chopped nuts, optional


Mix cream cheese and butter, beating until fluffy. Slowly beat in powdered sugar until smooth. Stir in vanilla.

Spread on cake, top with nuts if desired.
