Print this entryIf I’d have known toffee was so easy to make, I’d be fatter than I am now. Cashew Toffee 1 cup cashew halves and pieces 1/2 cup granulated sugar 1/2 cup packed brown sugar 1 cup buttter 1/4 cup water 1/2 cup white vanilla baking chips (see warning) Heat oven to 350F. Line a 15 X10X1 inch pan with foil. Spread the cashews on pan and bake 6 to 10 minutes, stirring occasionaly, until light brown. Pour into a small bowl and set aside. Set pan aside. In a heavy 2 quart saucepan, cook the granulated sugar, brown sugar, butter and water over medium high heat 4 to 6 minutes, stirring constantly with a wooden spoon, until mixture comes to a full boil. Boil 10 to 15 minutes, stirring constantly, to 300F on a candy thermometer on until a small amount of mixture dropped into a cup of very cold water seperates into hard brittle threads. Remove from heat and stir in half cup fo the cashews and immediately pour toffee into foil lined pan. Quickly spread to 1/4 inch thickness with a rubber spatula. Sprinkle with baking chips. Let stand for about 1 minute or until chips are completely softened. Spread softened chips evenly over toffee. Sprinkle with remaining cashews. Refrigerate about 30 minutes or until topping is firm. Break into 2X1 inches pieces. Store tightly covered at room temperature. Warning: The first time I made this I used the white chips and it did not work well. Second time I used milk chocolate chips and it worked great.

Print this entryAs I do every year, My Christmas post. CHRISTMAS DINNER And it came to pass on a Christmas evening While all the doors were shutted tight Outside standing a lonely boy child, Cold and shivering in the night Down the street walked the lonely boy child All the windows save but one were gleaming bright To this window walked the lonely boy child Peeking in, soft candle light Through other windows he had looked at turkey, At ducks and geese, and cherry pie Through this window he saw a gray haired lady Table bare, a tear in her eye. Into his pocket reached the lonely boy child Knowing well there was little there He took from his coat his own Christmas dinner A bit of cheese, some bread to share His outstretched hands held the food and they trembled As the door, it opened wide Said he “Would you share with me Christmas dinner?” Said she softly “Come inside” The gray haired lady brought forth to the table Glasses, two, her last drop of wine Said she “Here’s a toast to everyone’s Christmas,” “And especially yours and mine.” And it came to pass on a Christmas evening While all the doors were shutted tight That in that town the happiest Christmas Was shared by candlelight.

Print this entryGetting ready to start our Christmas baking. DW wants to make her hot cinnamon apple upsidedown cake, but she can’t find the recipe. I know it uses apple rings and red hot candies. The red hots are melted in water, then the apple rings are added to the water to soak up the flavor. Can any one help?? If she does find it later, I’ll post it.

Print this entryDW decided to buy a soda stream. It works just like they say it does. We have even mixed flavors to come up with new flavors. Grapefruit cola for one. You can adjust the amount of fizz in it too. The problem is with the cost. They say it’s cheaper, it’s not. The cost of the syrup here is about 41 cents. They don’t mention the cost of the CO2. Add that cost and it come out to $1.83 for 2 litters. You do use much less plastic, so it’s greener. I like it, but it does cost more than the store brand soda here in AZ.
