What are you doing to be keeping busy now that the holidays are over?  I’m still running back and forth to the nursing home, working on projects for church, and trying to get some projects done at the house.  The painting bug has hit me so I’m trying to get things ready for when this frigid weather subsides.  It’s so so cold here now and is to be worse tomorrow.  Summer suits me so much better!  Getting ready for some company the first week of February too.  Life is keeping me on the move…not sure if physical therapy is helping me or killing me!  No, it is helping….but oh my, it’s not a lot of fun as far as the body cooperation goes….  And what are you cooking?  I’ve been doing chili, soups, etc. with this cold.

    It is cold here too.  It makes soups and comfort food very welcome! 
    I’m trying to start garden plants from seed this year.   We have had a lot  going on with family and that keeps us running.

    We haven’t had much of a winter, but we do get 3 or 4 cooler days which makes soups really nice and tasty.  I’ve been trying new recipes lately and so far this is one of my favorites.  I happened to have bacon I needed to use, so I added it.  But I won’t next time.  It doesn’t need it.  BTW, I had fresh baby spinach and I would highly recommend using the fresh. And I forgot to dot the butter over the top before baking.  I don’t really think it needs it, though.  This isn’t a dish you’d want to serve on a weekly basis, but for a treat, it’s just great!
     

    JULIA CHILD’S SPINACH QUICHE
    2 tablespoons finely minced shallots or 2 tablespoons green onions
     

    2 tablespoons

    butter
     

    1 1/4 cups chopped blanched

    spinach (drained) or 1 1/4 cups frozen spinach
    (drained)

    1/2 teaspoon

    salt
     

    1/8 teaspoon

    pepper
     

    1 pinch

    nutmeg
     

    6 -8 slices

    lean bacon
    (optional)

    Custard:

    3

    eggs
     

    1 1/2 cups whipping cream

    1 pinch

    nutmeg
     

    1/8 teaspoon

    pepper
     

    1 (8 inch) partially cooked pastry shells (on baking sheet)

    1 cup grated S

    wiss cheese
     

    1 tablespoon

    butter
    , cut into pea-sized dots

    Preheat oven to 400 degrees and bake pastry shell for 9-10 minutes. Remove from oven and allow to cool. Reduce oven temperature to 375 degrees.

    Cook the shallots or onions for a moment in the butter. Add the spinach and stir over moderate heat for several minutes to evaporate all its water. Stir in salt, pepper and nutmeg and taste carefully for seasonings and set aside.

    Beat the eggs, cream and seasonings in a mixing bowl. Gradually stir in spinach mixture. Pour into partially baked pastry shell. Sprinkle with cheese and dot the top with butter. Bake at 375 degrees for 25 – 30 minutes. The quiche is done when a knife plunged into the center comes out clean. Serve immediately.

    Note: If adding bacon, press pieces into bottom of the pastry shell before filling.

      Thank you for the recipe Patti.  I like quiche and will have to try it.  DH doesn’t care for it, but I have lots of friends who would love to join me sometime I’m sure.  Saving and copying it right now!

    have been very busy visiting Buddy and getting him settled in a very nice Assisted Living home.  He had a very bad fall in Nov. and I can no longer care for him at home.  At the moment my daughter is here helping with getting him settled and we are also taking care of a legal issue about a right of way in Hana, Maui at my my family home where daughter Patty is now living with her husband.

    Have not done much cooking lately.

    Nalani, I do hope Buddy is doing well in Assisted Living.   I’m sure that was a hard decision to make.  Glad your daughter is there helping you and hope you enjoy the time with her.  I hope you are taking some time to rest and take care of yourself too!

    Nalani, I also hope all is going well for both you and Buddy.  These life changes are not easy.  Caregiving is all consuming when it’s 24/7, and hopefully this will make your visits really nice when you’re rested and can be your cheery self.  Then you need to have some of that much needed and well deserved “me time”.  It’s ok to take care of yourself too, and please do that…agree with Becky. God bless you and yours always

    I totally agree with Sherry.  Hopefully the time you spend with Buddy is more enjoyable for you both because you are not totally exhausted.
