Rec: Overseas Candy
I’m hesitant to post because I’m feeling like I post too much and am trying to cut back. The last thing I want to do is hog the board and prevent anyone else from posting. Anyway, I thought this could be important so am posting it. Has anyone tried this or something similar? It’s a lot of ingredients if it should be a flop. Please read the contributor’s note at the end.
Overseas Candy (never gets hard)
Ingredients:
3 lbs. white sugar
½ lb. butter or margarine
1 ½ cans Carnation milk (I assume evaporated and one can is 12 oz.)
1 bottle white Karo syrup (The bottle in my cupboard is 16 oz.)
2 lbs. nuts
Directions:
- Mix together everything except the nuts)
- Boil slowly until it forms a soft ball when dropped into cold water
- Beat until stiff
- Add 2 lbs. nuts, beat again
- Pour on cookie sheet
This was contributed as the recipe of the month to Power Lines by Linda Schwabenbauer. (That is the monthly publication of Central Electric Coop in PA).
Linda states, “My mother made this during WWII.
She washed & ironed for people to get the sugar & butter which were rationed. Mother sent it to the servicemen, sometimes it was months before they received it, and each only got a couple pieces because it was shared. I think our service people would enjoy this today wherever they are serving!”
She is probably right on!
Please KEEP POSTING!!!!!!!!!!!!! I for one LOVE your posts!!!!!!!!!!
Thank you Intrepidgal. I just don’t know about it. So many don’t post anymore. Sure wish they would come back. They are missed.
Oh, I ordered the Platinum model rotisserie today! It should be here in two days I guess….excited for a new toy! Thanks again for your encouragement on that!
Sherry, thanks for the recipe. And thanks for posting.
I would like to be here more often but my time is extremely limited right now. I keep hoping more people will return and be active again.
Oh Sherry, I love reading your posts. Please don’t think you post too much. I think a lot of us were very busy over the holidays and just didn’t have time. Then came New Year’s and the bowl games. But the holidays are over now. I have a few new recipes to post–but right now I’m just taking a break from cleaning. Still don’t have my tree down, but I like to leave it up until Jan.6. By Monday, I should be back to normal–whatever THAT is!
Keep on posting, girl!!
Sherry, you do not post to much. I for one look foward to your posts. Now The candy sounds good. I haven’t tried it, but might soon. Being on the recieving end of some “care packages” I know how much they mean to service members. I remember one package of tortillas. I would take out one to go eat. I had guys offering as much as $20.00 for one tortilla. Didn’t sell a single one. Did give a few away though…
The recipe sounds similar to a caramel that I make. Mine ha more stuff in it, but I’ll bet this is good, too.
It does get quiet here, doesn’t it. Don’t top posting, though. We get here when we can.
Was thinking I should try this recipe but can just barely think of sweets at this point let alone such a big amount… If anyone tries it, I hope they let us know how it is.
Pepe, that’s so admirable that you didn’t sell any of the tortillas! You’re one of the good ones for sure!
Thank you all for your kind words…
Sherry, last I heard there are no limitations on the number of posts we can make. You go girl! There’s plenty of space for anyone to contribute, you are NOT hoggin’ the board. I, too am happy to read your posts.
Thank you. Mimi’s has become my stress relief break place for many years. You can probably rate my stress level by the number of posts….guess ya’ll know that it’s about 5 million lately. At some point, things definitely have to settle. Once Mom’s house is sold (if ever), that will be one huge stressor gone. As with all of us, lots of life happening in and around us. Keeps us all young and frisky…right! Ha! Have a great rest of your weekend….stress free I hope!
