what to make with oldish Brie
I discovered that I had a piece of Brie which got lost in the back of the fridge. It is a little dry, but tastes fine. Any suggestions on how to use it up? It is past its prime for crackers

How abnout a nice cheese sauce for pasta?
thanks for the great ideas. I just love its flavor, but must have kept the cheese around a little too long.
Melt it slowly in a little milk or cream and use to mash potatoes. You will end up with a version of the French aligot — it’s just delicious!
I need to buy some Brie!
