I MUST try these ones!  Hoping they are as good as the reviews say. They are to stay soft and everything….here’s hoping!  Has anyone tried them before?

Snickerdoodle Blondies

2 2/3 cups flour
2 teaspoons baking powder
1 teaspoon salt
2 cups packed brown sugar
1 cup butter, at room temperature
2 eggs, at room temperature
1 Tablespoon vanilla
2 Tablespoons white sugar
2 teaspoons ground cinnamon

1. Preheat oven to 350 degrees. Lightly grease a 9 x 13 inch baking pan.

2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside

 

3. In a large mixing bowl, beat together the butter, brown sugar, eggs and vanilla until smooth. Add the flour mixture to the egg mixture and beat until well blended.

 

4. Spread the batter evenly in the prepared pan

 

5. In a small bowl, combine the white sugar and cinnamon.

 

6. Sprinkle the mixture evenly over the batter in the baking pan.

 

7. Bake for 25 – 30 minutes or until the surface springs back when gently pressed. Remove from oven and let cool slightly on a wire rack. While still warm, cut into squares with a sharp knife…

    We like snickerdoodles so this might be a great and easy treat.  Let us know what you think when you try them.

    As soon as I’m going somewhere to take these, I’ll try them.  If I make them today, I’ll eat them all in order not to tempt DH with his sugar issue!!  I really like Snickerdoodles so am anxious to try them and will report back.

    Blondies are still warm out of the oven.  I baked them 25 minutes in my Airbake pan and think I wish I had let them go another 3 or 5 minutes. They tested done with a toothpick so I took them out.  They did not spring back when I touched them so…. I think I should have waited until they did.  They have a really good flavor, and I’m anxious to see how they taste when completely cool.  I don’t think they will ever replace the plain old Snickerdoodle cookies though they are much faster to make~  we’ll see…

    Final Report:  Took this to church yesterday for Meet ‘n Greet Time….huge success with folks asking for the recipe.  The only negative was one lady who doesn’t care for cinnamon who asked if I could leave one corner without cinnamon next time.  I thought these were a lot better cold than warm…go figure…  I will be making these again!  Yay!!!

    Sherry, thanks for letting us know what you thought.  It would be quicker to make and sometimes that’s exactly what we need when time is short.  May not replace the cookies but a great alternative!
