I can make pretty good low carb/fat dips and they go great with celery or cucumber slices or green pepper slices but I also love to make salsa and salsa on a cucumber just doesn’t seem to attract me… are there ANY low carb chips that I could use with salsa or pico de gallo? Is there ANY hope?

    Yes Skip there is hope! I buy low carb wraps/tortillas to make my own tortilla chips. There are several very good brands available like La Tortilla Factory and Mama Lupes. At some Walmarts you can also find Joseph’s Flax, Oat bran and Whole Wheat Lavash Bread which comes in a large rectangle size…one lavash bread has 8 netcarbs (9×12″)…but that makes quite a lot of chips. I cut them with a pizza cutter sometimes brush with a bit of olive oil, or mist them and can add some spice or salt if you like before baking. Keep an eye on them so as not to burn and if you like them really crispy they can be flipped and toasted a bit more. Doesn’t take long at all. Great source of fiber as well.
    Another crispy treat is to spread turkey pepperoni slices on a paper towel and covered and nuke for 30-60 secs depending on microwave power…I dab the oil off and then toss some finely shredded cheese on them.

    When Harry was on the Atkins diet, we ate a lot of pork rinds.  Do you like those?

    These are both really good suggestions. In addition to watching my carbs I try not to go overboard on fats so haven’t looked into pork rinds but I think in moderation, they would be fine. I’m also going to look at low carb tortillas. I never thought of that even though I use them almost daily for a wrap with lettuce, onions and left over chicken. 
    I have also used turkey pepperoni but again never thought of using them as chips. This is terrific! and thanks for the link too!
