I ‘think’ this is a recipe from Kayce that she may have posted over at the round table forum since Mr. Picky is mentioned!!  We absolutely loved these so wanted to share and give a special thanks to Kayce!  (My notes in parenthesis)

1 cup Bisquick, or other baking mix

1/2 c. shredded Mozzarella or Cheddar cheese (I used Mozzarella and more of it)

1/8 tsp. salt

2 eggs, beaten

2 c. shredded zucchini (next time I will pack it really solid to measure)

2 tbsp. chopped onion, optional (I used more)

1 tbsp. butter

Combine Bisquick, cheese, salt, eggs, zucchini and onion is mixing bowl.  Blend well.  Melt butter in a large skillet.  Spoon heaping tablespoons of zucchini  mixture into skillet.  Fry for 3-5 minutes per side until golden.  Place bowned patties on a paper towel.  Add more butter to skillet when necessary for additional batches.  Serves 5-6.

    I hope you like them Becky.  We really do and have used them a couple of times in place of potatoes.  On the other hand, my sister tried them, liked them but said they were too ‘eggy’ for them. Maybe a texture thing.  I don’t know.  Perhaps the amount of onions I put in changes that eggy texture she’s talking about.  But that’s why there are zillions of recipes out there to suit different tastes….
