Mimi’s Cyber-Cookbook Chapter Four: Crock Pot and Slow Cooker Recipes
Not sure where I picked this one up, but we like it. If it’s from someone here, thank you and sorry I didn’t make note. It’s a great recipe!
French Dip Sandwiches
2 large onions, cut into 1/4-inch slices
1/4 c. butter or margarine
1 (3-4 lb.) boneless, bottom round beef roast
5 c. water
1/2 c. soy sauce
1 envelope onion soup mix
1 1/2 tsp. browning sauce, optional (didn’t use)
1 clove minced garlic
12-14 French rolls, split
1 c. (4 oz.) shredded Swiss Cheese (we’ve used Provolone and Mozzarella)
In a skillet, saute onions in butter until tender; transfer to crock pot or slow cooker. Cut the roast in half; place over the onions. Combine water, soy, soup mix, browning sauce and garlic; pour over roast. Cover and cook on low for 7-9 hours or until the meat is tender. Remove roast with a slotted spoon and let stand for 15 minutes. Thinly slice roast across the grain. Place on rolls with cheese. Broil 3-4 inches from the heat for 1 minute or until cheese is melted. (We don’t always bother broiling). Skim fat from cooking juices; strain and serve as a dipping sauce. Yield: 12-14 servings
I found a note that says this was posted by Kelly Mockler on 9-18-02. Thanks Kelly!
This is really good. I made it several times last winter. I used cottage cheese rather than ricotta, a little more than 1 lb. of meat and I omitted the mushrooms. Just personal taste.
CROCK POT LASAGNA
8 lasagna noodles, uncooked
1 lb. ground beef or ground turkey
1 tsp. Italian Seasoning
28 oz. jar spaghetti sauce
1/3 cup water
1 small carton of fresh mushrooms
15 oz. ricotta or 24 oz. cottage cheese (can use low fat)
2 cups shredded mozzarella cheese
1 red pepper
1 sweet onion
1. Break noodles. Place half in bottom of greased slow cooker or use a Reynolds Slow Cooker Bag and there’s no mess.
2. Brown ground beef. Drain. Stir in Italian seasoning. Spread half over noodles in slow cooker.
3. Layer half of sauce and water, half of mushrooms, half the pepper, half of the onion, half of ricotta or cottage cheese and half of mozzarella cheese over beef. Repeat layers.
4. Cover. Cook on low for 4-5 hours. (You can also double these ingredients and make 3 layers.) With newer crock pots, 4 hours is enough.
Here is a real family favorite–I may have posted this before. It’s gluten-free and dairy free.
CROCK POT SPANISH RICE
2 pounds lean ground chuck
2 medium onions, chopped
2 green peppers, chopped
2 cans (14 1/2 ounces) tomatoes
1 can (8 ounces) tomato sauce
1 cup water
2 1/2 teaspoons chili powder
2 1/2 teaspoons salt
2 teaspoons Worcestershire sauce
1 cup rice, (not Minute Rice)
Brown beef in skillet and drain off fat. Put all ingredients in CROCK-POT. Stir thoroughly. Cover and cook on Low 6 hours. (High: 3 hours). This recipe is gluten-free and dairy-free.
One more–I really love my crockpot–especially in the summer. This recipe is too easy!
CROCKPOT DESSERT (CD Kitchen)
1 can (21 ounce size) cherry or apple pie filling (blueberry is good, too)
1 package yellow cake mix
1/2 cup butter, melted
Place pie filling in crock pot. Combine dry cake mix and butter (will be crumbly) sprinkle over filling. Sprinkle with 1/3 cup chopped walnuts if you desire. Cover and cook on low for 3 hours.
Judy’s Crock-pot Chicken and Broccoli 1 1/2 cups broccoli florets
4 skinless chicken breasts cut up
1 (10 3/4 oz) can cream of mushroom soup
1 1/2 cups hot water with chicken cube dissolved in it or one can of broth
Salt and pepper to taste
1/4 cup mayonnaise
1 tsp almond flavouring
A dash of Worcestershire sauce
1 1/2 cups blanched almonds
1/2 cup each mild cheddar and Parmesan cheese grated 1 box garlic flavoured croutons
Method
Put the first two ingredients in crock-pot. Chicken on top of broccoli. Mix up soup to mayonnaise then pour over chicken and broccoli. Mix the remaining ingredients together and sprinkle over the food already in the pot. Top with croutons. Bake at low for 8 -10 hours he potatoes are fork tender.
Wow! Thanks! I’m getting more into the crockpot cooking now that I’m home more and don’t cook everything to mush. DH has been anti-crockpot from the years I worked. My friend just got a new cookbook … I think it’s called something like church potlucks and crockpot favorite recipes…something like that. I looked at it very briefly today…and it looks like it’s loaded with good recipes. It looks like a textbook! I told her she needs to study that book religiously! I’ll try to find it and let you know the correct name if interested
If there’s a way to delete a post, I’d like to delete the crockpot dessert recipe. I’ve had it before and it was pretty good, but I made it the other night and it was a sickeningly sweet mess. Don’t know if my newer crockpot made a difference or not, but it was NOT good at all.
