What kinds of food and/or beverages are you making to help stay cool in all of this heat?  We like the Orange Julius Drinks in the blender for one thing.  Wonder where I have that recipe saved?  DH loves those things so I guess I’d best try to find that one for later when he gets home.  It’s to be 98 here today, which is still rather cool to some of you I’m sure.  But it’s hot for us!!!

    Fruit Smoothies

    1/2 cup orange juice
    1 banana
    6-7 frozen strawberries
    4-5 slices frozen peaches
    5-6 frozen blueberries
    6-7 ice cubes
    fresh mint (optional)
    dash of nutmeg (optional)
    1 tsp. honey (optional)

    Place all ingredients except ice cubes in blender. Puree until smooth. Add ice, and puree again. Pour into a glass and sprinkle nutmeg on top and garnish the some fresh mint. Serves 2 or 3

    Strawberry Cheesecake Shake

    The cool thing about this week’s Top Secret Recipe is that many of the ingredients come in a kit designed for making strawberry cheesecake. Find Jell-O No Bake Strawberry Cheesecake mix near the puddings in your supermarket and you have half of the ingredients locked up. Inside the box are three separate packets: Strawberries, the cheesecake mix for flavoring and graham crackers crumbs to sprinkle over the top of your shake as they do at the restaurant. To complete your clone you’ll just need some vanilla ice cream, a cup of milk and a little whipped cream. The recipe below makes two regular size shakes, but you can make another two drinks with the remaining strawberries that come in the mix. If you thaw out some frozen, sweetened strawberries (those syrupy strawberries that come in a box), you can make as many as 8 more shake clones with the remaining cheesecake mix powder and graham cracker crumbs.

    1 cup milk
    3 cups vanilla ice cream
    1/2 cup strawberries and syrup (from Jello-O No Bake Strawberry Cheesecake kit)
    3 tablespoons cheesecake mix powder (from cheesecake kit)
    On top – canned whipped cream
    2 teaspoons graham cracker crumbs (from cheesecake kit)

    Combine milk, ice cream, strawberries and cheesecake mix in a blender and mix on high speed until smooth. Pour into two 12-ounce glasses.

    Garnish the top with a squirt of whipped cream from a can and about a teaspoon of graham cracker crumbs from the cheesecake kit. Serve each shake with a straw. (http://www.topsecretrecipes.com)

    Strawberry Peach Smoothie
    3 servings (3 cups)

    1 banana, peeled
    1 cup strawberries, hulled
    1 cup peaches, sliced
    1 cup orange juice
    1 tablespoon honey
    1 cup ice, crushed

    Add fruit, juice and honey in a blender. Blend on low speed to mix. Stir in ice. Blend on high until smooth.

    Sonic Coconut Cream Pie Shake

    4 oz. cream of coconut (not coconut milk)
    5 to 6 scoops Breyer’s vanilla ice cream (or another high-quality brand)
    2 or 3 squares of graham crackers
    Whipped cream or Cool Whip®

    Put first three ingredients in blender and blend to desired consistency. Top with whipped cream or Cool-Whip. Yields 2 servings.

    The Devil-Made-Me-Drink-It Dessert Smoothie
    Makes 2 servings

    1/2 of a 1-pint (a generous cup) black or red raspberries or blackberries (reserve a few for garnish)
    1 (8-ounce) container raspberry or blackberry yogurt
    1/4 to 1/2 cup nonfat or regular half-and-half
    1/2 cup boysenberry or raspberry sorbet, slightly softened
    2 small scoops (about 1/3 cup each) vanilla-raspberry swirl frozen yogurt or ice cream

    These are creamy, like milkshakes, a beautiful deep pink if you use red raspberries, or purplish pink if you use black raspberries or blackberries. Serve for dessert, following a light dinner, such as grilled chicken salad.

    In blender, puree fruit with yogurt and half-and-half. Add sorbet and blend. Pour into tall, stemmed goblets, being careful not to splash up sides. Gently place a scoop of frozen yogurt or ice cream on top of each. Garnish with a few berries.

    1 cup cold water

    12 ice cubes — (12 to 14)

    Blend first 6 ingredients in blender. Add ice cubes 1 or 2 at a time through top of lid while blending. Serve immediately.
    Peachy Yogurt Cooler

    Peachy Yogurt Cooler
    Prep: 5 min

    1/2 cup milk
    1 container (6 ounces) Yoplait® Original peach low-fat yogurt
    1 medium fresh peach, peeled, pitted and cut up
    Ground nutmeg

    Place milk, yogurt and peach in blender. Cover and blend on high speed about 30 seconds or until smooth.

    Pour into glasses. Sprinkle with nutmeg.
    Makes 2 servings

    Substitution: Not a nutmeg fan? Sprinkle a dash of cinnamon on these refreshing coolers instead.

    Pumpkin Shake

    Pumpkin Shake

    3 cups (1-1/2 pints) vanilla ice cream
    1-1/2 cups milk
    1 can (15 ounces) solid-pack pumpkin
    1/4 cup light corn syrup
    1 teaspoon vanilla extract
    1/4 teaspoon ground cinnamon
    1/4 teaspoon ground cloves

    In a blender, combine all the ingredients. Blend on high speed until thoroughly mixed. Serve immediately. Serves: 4

    Garnishing Tip: It’s easy to give this a really festive finish by topping each serving with a dollop of whipped cream, a sprinkle of cinnamon, and a few candy corn.

    Note from Marlen: Mr. Food suggested swirling a bit of chocolate syrup and/or caramel sauce inside the glass for decoration and extra flavor. They looked and tasted wonderful!

    Banana Raspberry Smoothie
    Prep: 10 min

    1-1/2 cups DOLE® Pineapple Juice
    1 cup vanilla yogurt or frozen yogurt
    1 cup DOLE Raspberries
    2 ripe, medium DOLE Bananas, peeled

    Combine pineapple juice, yogurt, raspberries and bananas in blender. Cover; blend until smooth. Garnish with raspberry and banana slices, if desired.

    Makes 3 servings

    14 crushed Oreos
    1 pt. vanilla ice cream
    1 1/2 c. milk
    1/4 c. chocolate syrup

    Mix in electric blender. Makes 4 (18 ounce) glasses.

    3 tablespoons frozen grape juice concentrate
    aerosol whipped cream

    Blend ingredients to desired consistency. Top with whipped cream

    Tropical Pina Colada Refresher

    Pina colada refresher

    2 cups pinapple juice
    2 cartons(6oz each) pina colada yogurt
    1/2 cup cream of coconut(usually found by cocktail ingredients)

    Mix altogether and refrig. until ready to serve. Serve over ice and garnish with pineapple slice and maraschino cherry.
    Cantalope Milk Shake

    Cantalope Milk Shake

    1 ripe cantalope, peeled, seeded and coarsely sliced
    1/2 cup milk
    2 tbsp. lemon juice
    2 tbsp. sugar
    1 pint vanilla ice cream

    Blend first four ingredients on high for 10 seconds. Remove cover and add ice cream. Blend.

    Makes 4 drinks.

    Candy Cane Shake

    5-6 drops peppermint extract
    1/2 cup milk
    1 cup vanilla ice cream
    grenadine syrup
    aerosol whipped cream
    candy cane

    Blend all the ingredients until smooth. Swirl the glass with grenadine syrup from the bottom to top. Quickly pour the drink. Top with aerosol whipped cream and a candy cane. Serves one.

    Strawberry Smoothie

    1 (8 oz) container vanilla yogurt
    1 (10 oz) package frozen sliced strawberries
    1 banana, sliced and frozen
    1/4 cup orange juice
    1 T honey

    Process all ingredients in a blender until smooth, stopping once to scrape down sides. Serve immediately.

    Peachy-Pineapple Smoothie

    1 (29 oz) can sliced peaches in syrup, drained
    1/2 cup pineapple juice, chilled
    1/4 cup sugar
    1 pint vanilla ice cream
     
    , softened

    Process first 3 ingredients in a blender until smooth, stopping once to scrap down sides. Add ice cream; process until smooth, and serve immediately.

    Pineapple Smoothie
    1 quart pineapple sherbet
    1 (6 oz) can pineapple juice
    1/4 cup fresh lemon juice
    1/2 t grated lemon rind

    Process until smooth, and serve immediately.

    Orange-Banana Smoothie

    1 pint orange sherbet
    2 bananas, sliced
    1 cup fresh orange juice
    3/4 cup milk
    2 T honey
    Garnish: orange wedges

    Process first 5 ingredients. Add ice cubes to 5-cup level; process until smooth, stopping once to scrape down sides. Garnish, if desired; serve immediately. For a thicker consistency, slice and freeze bananas.

    Four-Berry Smoothie

    2 cups vanilla ice cream, softened
    1 cup fresh or frozen strawberries, sliced
    3/4 cup fresh or frozen blueberries
    1/2 cup fresh or frozen raspberries
    2 T sugar
    1/2 cup cranberry juice
    1 T lemon juice
    Garnish: fresh blueberries, raspberries, mint sprigs

    Process first 7 ingredients in a blender. Add ice cubes to 4.5 cup level; process until smooth, stopping once to scrape down sides. Garnish, if desired; serve immediately.

    Orange Creamsicle Smoothie
    (2 servings)

    2 frozen orange juice bars
    1/2 cup cold milk
    1 cup low-fat frozen vanilla yogurt
    3/4 cup cold fresh orange juice
    2 orange slices for garnish

    Blend the juice bars, milk, frozen yogurt and orange juice until smooth and thick. Spoon in a tall, cold glass and garnish with an orange slice. Serve immediately.

    Banana Strawberry Freeze
    (1 serving)

    1 banana, peeled and cut in thirds
    1 cup halved frozen unsweetened strawberries
    1 whole fresh strawberry for garnish

    Put the banana, frozen strawberries, and 1/2 cup water in a blender. Blend until smooth and thick, adding more water if needed. Spoon in a tall, cold glass and garnish with a strawberry. Serve immediately.

    Raspberry Apricot Cooler
    (4 servings)

    1.5 cups unsweetened raspberries
    1 cup canned apricot nectar
    3 T sugar
    3 T lemon juice
    2 cups cold sparkling mineral water
    fresh raspberries for garnish

    Put the raspberries, apricot nectar, sugar and lemon juice in a blender. Blend until smooth. Strain in a pitcher. Cover and refrigerate the fruit mixture until it is cold. Pour sparkling water over the cold fruit mixture and stir until foamy. Fill 4 tall, cold glasses with ice and pour in the cooler mixture. Garnish with raspberries.

    I fix a lot of salads. I prefer baby spinach leaves for the greens. For the protein, I add cooked chicken or sliced left over steak. I also add crumbled blue cheese, pepetas or sunflower seeds, and bacon bits.

    Me too.  I think salads for this evening.  Hot with storms predicted…praying we don’t lose  the electricity. That sure puts a crimp in the cooking!  After I posted this,  I realized that it’s not much, if any, different from the Summer Meals thread…sorry.

    Wow, Sherry–nice smoothie recipes!  Thanks!   We drink lots of water.  Plain old ice water.  We like salads, too.    Like Bobbijo_AZ, we like baby spinach.  It’s good with strawberries and almonds.  If I have leftover diced chicken in the freezer I’ll add that.  I really like poppy seed dressing on it, if anyone has a good recipe, I’d appreciate it. 

    We’re actually cooler here in Central Florida than a lot of you guys are.  It was 89 yesterday and this morning it’s been raining lightly for several hours.  Love that rain.  Keeps the heat down–but the humidity UP!  :-(

    Humidity…ugh!  Not fun!  Good water is probably my favorite all the time too.  At one point in my life, we had fresh spring water all the time out in the old spring house.  I’ve never forgotten that, and I was very young.  And we never even got sick or died from all using that same old tin ladle that was kept there for all to use!  The best water ever, salamanders to play with…it doesn’t get any better for a little kid than that!  I think that gave me a lifelong love of good water…a real blessing.  Hoping to pick up some baby spinach to add to the bag of salad mix I got on sale for $.67 yesterday.  I was hoping someone would have a poppy seed dressing recipe for you.  My family has been military forever and poppy seeds were never part of our diet as it would affect their drug screenings negatively.  Personally, I really like the poppy seed cake, dressings, etc.
