I’ve finally made it back!  I’m not sure if everyone had to register again and receive a new password or not, but I did.  I hope everyone has had a nice long weekend.  These muffins are so good and not so hard on the waistline.

2/3 c. sugar

1/2 c. vegetable oil

2 egg whites

1 whole egg

1 c. unsweetened applesauce

1 c. molasses

1 1/2 c. white flour

1 c. whole wheat flour

2 1/2 tsp. baking soda

1 tsp. ginger

1 tsp. cinnamon

1 tsp. allspice

1/2 tsp. salt (optional)

In a bowl beat sugar, oil, egg and egg whites until blended.  Add applesauce and molasses, mix until blended.

In a second bowl, combine dry ingredients.

Gradually add dry ingredients to other mixture.  Mix only until moistened and blended.  Do NOT overmix.

Fill lined muffin tins 2/3 full.

Bake at 350 degrees 18-22 minutes (if light colored tins OR 325 degrees if dark tins). 
Yield:  21 muffins

    Hi Sherry!  Great minds must think alike.  I was just looking at a gingerbread muffin recipe this morning.  But your recipe sounds a lot healthier than mine, with it’s 2 sticks of butter, 4 eggs and a cup of sugar.  :-)  

    I hope people will get used to the new board and start posting.  I really enjoy reading what everyone’s cooking/eating. 

    Are you going to start the “what new recipes have you tried this month” thread? That’s not the exact wording, but I think you get my gist.  I hope so as it was one of my favorites.

    *Hi Patti,  We just had the muffins again this morning at a meeting. They really are good.  Of course, I think a big glob of whipped cream or vanilla ice cream would be great with them too…but not necessary at all.  They were more moist last time, but that’s a matter of how long they are baked.  Play that one by ear.  18 minutes was good and moist but that depends on each individual oven too.  Sure, I will start the monthly cooking thread.  It took me forever to have the time to sit down and figure out why I couldn’t get it here.  After reading, I see that JB told us we would have to get the new password. That only took a couple of minutes once I got to it.  Hope the muffins work out well for you too.
