So I watched Nigella Lawson’s program and she took some chicken thighs and ribs and put them in a bag with BBQ Sauce and marinated them over night, then the next day cooked them for 90minutes in a cassarole dish at 400 degrees. 

First, that makes me think the thighs will be over done. I’ve cooked chicken parts in the oven at 375 for 45 minutes, This is twice as long and hotter too. then I look at the instructions on the ribs and it says 300 degrees for 2 hours.  

THEN I go on line and every single one of the recipies cooks the ribs dry and then adds the sauce at the last minute…

  • Ok, first let me say I was completely confused at first.  I read this as chicken ribs instead of chicken and ribs!  I thought “chicken ribs?  You can buy chicken ribs???”  Anyway, I went and looked at the recipe and this recipe sounds all kinds of wrong to me.  I wouldn’t cook chicken and pork together for the same amount of time at the same temperature.  When I oven cook spare ribs, I cook them at 250 for FOUR HOURS and then pop them on the grill or raise the temperature to 375 for a few minutes to crisp them up.  For oven roasted chicken pieces, I do 350 for 45 minutes to an hour.  The Nigella recipe that I found for Chicken and ribs was on Foodnetwork.com and called for cooking at 400 degrees for 1 1/2 hours, not 2, but it still sounds crazy to me.  Let us know how it works, if you try it.

    *I wouldn’t cook chicken and ribs together either and the cooking time seems off.    If anyone tries that recipe, please let us know how it turns out.

    *As you might expect, the ribs came out just perfect and the chicken overcooked (and for thighs, that’s saying something since they’re generally pretty forgiving). One thing, I skinned my chicken and she didn’t. that could contribute to moistness although when it’s cooking submerged in sauce, I don’t think much. Anyway I’m having a big group over next week and think my solution is to cook them in separate cassaroles. 

    It’s always an adventure!

    *Oh and I forgot to say I’m still laughing at the thought of buying ‘chicken ribs!”  Oooo succulant chicken ribs! Only $4.49 a pound!  I’m laughing because I do that ALL the time,
