Beef: Green Apple Beef Stew

Green Apple Beef Stew

1 lb. lean beef
2 tbls. vegetable oil
1 medium onion, sliced
2 tbls. all purpose flour
2 green apples, tart. (Granny Smith)
1 can beef broth (13 3/4 oz.)
1/2 teaspoon ground sage
2 medium potatoes (peeled and cubed)
1 cup peas
1 cup carrots, sliced round


Place saucepan over medium-high heat, brown beef in oil, stir in onion slices, cook until tender. Stir in flour, apple slices, broth and sage. Heat to a boil, reduce heat cover pan, simmer for 1 - 2 hrs. until tender

Add potato cubes, carrot slices and cook for 20 - 30 minutes add peas, simmer until done. Do not salt while cooking, the broth usually has enough salt.
