Bean: Rounds-'Em-Up Bean Soup

Round-'Em-Up Bean Soup
Mr. Food's Quick and Easy Diabetic Cooking

1 teaspoon of olive oil
1 pound of hot Italian turkey sausage, casings removed (use a mild sausage for less spice)
1 small onion, chopped
2 cloves of garlic, minced
3 cans (15-1/2 ounces each) of Great Northern Beans, undrained
2 cans (14-1/2 ounces each) of ready-to-use reduced sodium chicken broth
1 can (14-1/2 ounces) of diced tomatoes, undrained
1 teaspoon of dried basil
1/2 teaspoon of black pepper


In a large soup pot, heat the oil over medium-high heat. Add the sausage, onion, and garlic. Cook for 5-6 minutes or until no pink remains in the sausage, stirring frequently to break it up.

Add the remaining ingredients and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, for 30 minutes.
