Chewy Fruit and Nut Granola

1 cup regular or quick cooking rolled oats
3 Tablespoons packed brown sugar
1/4 cup shredded coconut
1/4 cup chopped dried apricots
1/4 chopped prunes
1/4 cup raisins or currents
1 1/2 cups chopped pecans or walnuts
2 Tablespoons sunflower seeds
2 Tablespoons sesame seeds
2 Tablespoons salad oil
3 Tablespoons honey
1/2 teaspoons vanilla


Preheat oven to 325° F. and butter a rimmed baking sheet.

In a bowl, stir together the first 9 ingredients (oats through sesame seed), set aside.

In a saucepan, combine, the remaining ingredients. Heat stirring until bubbly. Pour sauce over first mixture and stir until fully coated. Spread mixture in a single layer on a buttered rimmed baking sheet. Bake 325 for 15 to 20 minutes, stirring mixture several times. Do not over cook, as it will be dry. Remove from oven.

With a wide spatual lift mixture (as best you can) onto a piece of buttered wax paper. Shape into a rough triangle about 1/2 in thick. A rolling pin shapes it very well. Let cool, then break into large or small pieces and pack in an airtight container.

Makes about 3 cups.
