Cranberry Candied Apples

8 to 10 medium-sized red apples (preferably McIntosh)
8 to 10 flat wooden popsicle sticks
1 3/4 cups light corn syrup
3/4 cup frozen cranberry juice cocktail concentrate, thawed (1/2 of 12 oz. can)
1/2 tsp. red food coloring (optional)

Line cookie sheet with foil; grease foil. Wash and dry apples; remove stems. Insert popsicle sticks in stem ends; set aside.

In top part of double boiler combine sugar, corn syrup and cranberry juice concentrate. Cook and stir over direct medium heat until mixture comes to a boil and sugar is dissolves. Continue to cook, without stirring, until syrup reaches 298 degrees on candy thermometer. Remove from heat and set over hot water in bottom of double boiler. Stir food coloring into cranberry mixture, if using.
