Crackers: Graham Crackers by Angel

Graham Crackers

2 1/3 cups whole meal plain flour
1/2 cup cornflour
1/2 teaspoon salt
1/4 cup castor sugar
150 g. butter
3/4 cup cream


Sift flours and sugar into a bowl Rub in butter with fingertips, until mixture resembles fine breadcrumbs
Stir in cream to make a pliable dough.

Shape into a ball wrap in plastic cling film, and chill for 30 minutes. Roll out thinly. Cut into squares or rectangles with a sharp knife or pastry wheel. Place on a greased baking trays. Allowing room for spreading.

Bake at 200ºC for 6-7 minutes or until firm and golden brown. Cool 2-3 minutes on trays. Transfer to wire racks to cool completely. Store in an air-tight container.
