Tamarind Fish Sauce

Tamarind Fish Sauce

2 Tablespoons oil
3 tablespoons finely minced garlic
1 Tablespoon Red Curry Paste
1/2 cup tamarind liquid
6 Tablespoons fish sauce
1/4 cup soy sauce
1/4 cup brown sugar
3 Tablespoons thinly sliced green onion
1 Tablespoon finely minced ginger


In 2 Tablespoons oil heated over medium heat, stir-fry garlic for 15 seconds. Add curry paste and cook until spices release their scent. Add tamarind, fish sauce, soy sauce, and sugar and cook until sugar dissolves and sauce thickens slightly.

Stir in green onions and ginger, reduce heat and simmer 2 minutes.

Pour over fried fish and garnish with cilantro
