Sweet and Sour BBQ Sauce

3 Tbsp vegetable oil
2 Tbsp Worcestershire sauce
1 onion, medium, finely chopped
1 large celery rib, finely chopped
2 cloves garlic, minced
1 tsp grated fresh ginger
1 tsp paprika
2 cup chili sauce
1/3 cup honey
1/4 cup cider vinegar
1 cup apple cider, or apple juice
2 Tbsp dark rum
1/2 to 1 tsp hot pepper sauce; or to taste


Heat the oil in a non-aluminum saucepan. Add the onion, celery and garlic and cook over medium heat until softened, about 3 minutes. Stir in the ginger and paprika and cook 30 seconds. Add the chili sauce, honey, vinegar, dicer, Worcestershire sauce, and rum. Bring to a boil, reduce the heat to medium-low, and simmer until slightly thickened, about 30 minutes. Use immediately or refrigerate up 4 weeks.

Makes about 3 cups.
