Stephenson's Rice Casserole
3 cups rice
1 cup parsley, chopped
1/2 cup grated cheddar cheese
1/3 cup chopped onion
1/4 cup chopped green pepper
1 clove garlic, minced
14 1/2 oz. can evaporated milk
2 eggs, beaten
1/2 cup vegetable oil
1 Tsp. salt
1/2 tsp. each seasoned salt and pepper
1/4 tsp. Accent
juice and grated rind of 1 lemon
Mix rice, parsley, cheese, onion, green pepper and garlic in 2 quart greased casserole. Blend rest of ingredients and mix into rice. Sprinkle with paprika. Bake 350 about 45 min or until like a soft custard.
