Beef: Tri-Tip Roast

Tri-Tip Roast

1 tablespoon oil
1 (2-3 pound) tri-tip steak
1 large onion, sliced
2 cloves garlic, smashed and peeled
1 can beef broth, or equal amount homemade
1-2 anchovie fillets, chopped, optional
1 tablespoon tomato paste
salt and pepper to taste, adding more after cooking


Heat pressure cooker, add oil and sear tri-tip until well browned on both sides, turning just once. Add the rest of the ingredients. Bring to pressure and cook per instructions.
