Beef: Beef with Vegetables

Beef with Vegetables

1 tablespoon fat
chuck roast - 3 lbs. after trimming all the fat off
salt and pepper
water - 1/2 cup
potatoes - 6 medium
carrots - 1 lb. large size (I use 2 lbs.)


Heat Cooker and add fat. Season beef and brown on all sides. Add water. Close cover and place regulator on vent pipe. When regulator begins rocking, cook for 25 minutes (with regulator only rocking slowly).

Cool at once by running small amount of cold water on top to let pressure drop. Place potatoes and carrots on top. Do not fill pressure cooker more than 2/3 full. Put regulator on top and bring heat back up. When regulator rocks slowly, cook for 10 to 12 minutes. Again, cool at once.

You can make a gravy, but we just like it with "aus jus".
