Vegetable: Polish-Style Stuffed Mushrooms

Polish-Style Stuffed Mushroom
Makes about 2 dozen

24 large Mushroom
1 Tablespoon Butter
2 Tablespoons Shallots, minced
1/4 cup Bread crumbs
1 tablespoon Sour cream
2 teaspoons Parsley, chopped
To taste Salt and pepper
1/2 cup Swiss cheese, grated


Remove the stems from the mushrooms. Minced the stems and set aside. Place the caps on a lightly oiled cookie sheet.

Melt the butter in a skillet and add the shallots. Cook until just soft. Remove from the heat. Toss in the breadcrumbs, sour cream, parsley, minced mushroom caps and seasonings. Place about 1 teaspoon in each cap. Top with the cheese.

Bake at 400 for 25 minutes. Serve warm.
