Ham Salad (Salatka z Szynki)
1 1/2 cup diced ham
1 cup cooked diced potatoes
3- 4 diced dill pickles
1/2 cup mayonnaise
1 tablespoon horseradish (or to taste)
1 tablespoon chopped parsley (optional)
sliced cucumbers and radishes (optional)
Combine horseradish with mayonnaise and set aside.
Mix diced ham, diced potatoes, and diced dill pickles. Mix in horseradish/mayonnaise mixture. Place on serving dish and sprinkle with parsley. Garnish with cucumber and radish slices if desired.
If you don't like mayonnaise or horseradish, you can use 1/2 vinaigrette with crushed garlic, or mustard instead of horseradish. Dill is also a nice spice that I add when in the mood.
This is another Polish style recipe "Grandma used to make" called "salatka z szynki".
