Polish Spinach (Szpinak po Polsku)

Szpinak po Polsku (Polish Spinach)

2 lbs. fresh spinach
3 Tablespoons butter
2 Tablespons flour
2 buds garlic, crushed (or to taste)
2/3 cup sour cream
2 eggs, beaten
Salt and Pepper to taste
Lemon juice (optional)


Wash spinach thoroughly, and cut off stems. Cover spinach with water and boil for 5 minutes. Drain spinach in colander, and press out remaining moisture. Chop spinach until the consistency is fine.

In a pot, melt butter, then stir in flour. Allow to simmer, but do not brown. Add garlic, sour cream, and spinach. Remove from heat and stir in eggs.

Mix well, and allow mixture to simmer on low until spinach is fully cooked (usually 5-10 minutes). Add salt and pepper to taste, and sprinkle with lemon juice if desired.
