Muffin Pizzas

4 English muffins, split and toasted
1 can (8 oz) pizza sauce
1/2 cup chopped Canadian bacon, or sliced pepperoni
1/2 chopped bell pepper (use green and red for holidays)
1 pkg. (4 oz) shredded mozzarella cheese


Preheat broiler (or nuke in microwave after assembling).

Place muffins onto shallow pan (broiler) or dish (microwave). You can toast muffins in the broiler. Spread pizza sauce onto muffins. Top with meat and green pepper. Sprinkle with cheese. Broil for 3 minutes or til heated through and cheese is golden. (or nuke if you prefer).

Serves 4.
