Basic Box Cake from Scratch

Basic "Box" Cake from Scratch
2 cups all-purpose flour
1 1/2 cups sugar
1/2 cup butter or margarine
1 cup milk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla essence
3 eggs
This substitutes for a 18 1/2 oz. cake mix.
Preheat oven to 175oC). Grease a 9x13 inch cake tin. Sift the flour, baking powder and salt; set aside.
In a large bowl, cream sugar and butter until light and fluffy. Add eggs one at a time, beating thoroughly each time. Alternately add flour mixture then milk to cream mixture. Add vanilla. Pour batter into the prepared tin. Bake 40 - 45 minutes or until done. Frost and enjoy.
