Bisquick Mix

10 cups sifted flour
3 1/2 cups powdered milk
5 tablespoons baking powder
2 1/2 teaspoons salt


Combine well and store in an air tight container. This makes about 5 batches.

Pancakes: Combine 2 1/4 cups baking mix with mixture of 1 egg, 1 1/2 cups water and 2 Tbl. oil. Stir until moistened.

Dumplings: Combine 2 cups baking mix with 1 cup water. Stir until mixed. Drop by spoonfuls into simmering soup or gravy. Cover and cook for 20 minutes. Add spices or shredded cheese if desired.

Biscuts: Combine 2 1/4 cups baking mix with 1/4 cup shortning and 2/3 cup water. Mix lightly until dough forms a ball. Turn onto floured surface. Knead and roll dough to about 1/2 inch thick. Cut with a biscuit cutter or a small glass. Bake on ungreased baking sheet at 450 degrees for 10-12 minutes.

Muffins: Combine 2 1/4 cups baking mix with 1/4 cup sugar. Combine 1 egg, 3/4 cup water, and 1/3 cup oil. Add to dry ingredients. Add nuts, rasins, cinnamon, chopped fruit,or even shredded carrots or squash for variety. Mix only enough to moisten flour; batter will be lumpy. Grease muffin tins and fill 2/3 full. Bake at 400 degrees for 45 minutes.
