Hummus

1 -2 Cups garbanzo beans (chick peas)
pinch of baking soda
1 tsp. salt
reserved liquid from cooking the beans
1/2 Cup tahini
6-9 Tbsp. fresh lemon juice
4-5 garlic cloves, minced


Cook beans until very soft. Add water from time to time to keep beans covered. Drain and reserve liquid and allow to cool.

Put beans in food processor with tahini, 5 Tbsp. lemon juice and minced garlic. Process in pulses until a thick paste is formed. Add reserved liquid as needed until the right texture is achieved. Taste and add more salt or lemon juice, if needed.
