Hummus Bi Tahina

Amount Measure Ingredient -- Preparation Method

30 ounces garbanzo beans (2 cans) -- undrained
3 small cloves garlic
5 tablespoons tahini -- (sesame seed paste)
1/4 cup fresh lemon juice
3 tablespoons water


Drain garbanzo beans, reserving 1/4 cup liquid, and set aside.

Position knife blade in food processor bowl. Drop garlic through food chute with processor running, and process 3 seconds or until minced. Add garbanzo beans, reserved 1/4 cup liquid, and remaining ingredients; process 3 minutes or until smooth. Yield: 3 cups (serving size: 1/4 cup).

Serving Ideas : Serve with pita bread and raw vegetables or cut up a nice bread and make "chips" by slicing into small slices and baking until lightly browned.
