Fiesta Bake

8 oz. ground turkey or beef
1/2 cup chopped onion
1/4 cup green pepper
1/2 cup canned, sliced mushrooms, drained
1 cup frozen corn
1 cup tomato sauce
1 Tbl. chili seasoning
3/4 cup Bisquik baking mix
3/4 cup chunky salsa
1/3 cup shredded Cheddar cheese


Preheat oven to 350 degrees F. In large skillet, sprayed with Pam, olive oil flavored, brown meat, onion, and green pepper. Add mushrooms, corn, tomato sauce, and chili seasoning mix. Stir well to blend.

Pour into 8X8 inch baking dish, sprayed with Pam. In medium bowl, combine Bisquik and salsa. Add cheese; mix well. Spread evenly over meat mixture. Bake 25-30 minutes.
