Quesadillas
8 Flour tortillas
a whack of both Jack and cheddar cheeses, grated
a (4 oz.) can of diced chillies (mild)
a smear or mayonnaise (or Miracle Whip)
"PAM" the bottom of the bottoms of the tortillas. Place them on the cookie sheet. Smear with the mayonnaise or Miracle Whip. Top with the grated cheeses and the chillies. Sprinkle with dried basil or rosemary or oregano or whatever. Top that little pie with another tortilla. Spray the top of the 2nd tortilla with a little PAM.
Put into a 400 degree oven for 5 minutes. Use a flipper to flip it over. Cook another 5 minutes until you know that the cheese is melted. Cut into wedges. Serve hot with sour cream and a salsa or your choice.
