Southern's Brother's favorite Chocolate Marshmallow Clusters

posted by Southern 05-07-98 12:38 PM

My brother died seven years ago, alone in another country. We had to have
him cremated in order to bring him home for burial. Wish I could say that
I've come to terms with it, but I still cry and miss him terribly.

This recipe was one of his childhood favorites.

CHOCOLATE MARSHMALLOW CLUSTERS

6 oz. semi-sweet chocolate
1/2 cup sugar
1/2 cup evaporated milk
1 tablespoon light corn syrup
1 cup chopped pecans
1 cup miniature marshmallows

In a heavy saucepan, combine sugar, milk, and corn syrup. Bring mixture to
a full boil over medium heat. Boil for 2 minutes, stirring constantly.

Remove from heat. Add chocolate pieces. Let cool for 10 minutes. Stir in
nuts and marshmallows. Drop by spoonfuls onto a cookie sheet lined with
waxed paper. Refrigerate for 1 hour. Makes about 24 candies.
