Bacon and Salsa-Topped English Muffins

8 slices lower-salt bacon
4 English muffins, split
1/4 cup dairy sour cream
1 medium tomato, cut in 8 thin slices
1/2 cup prepared chunky mild salsa
1 cup shredded Monterey Jack cheese


Line the bottom of an 11x7-inch microwave-safe dish with 2 layers of paper towels. Arrange 4 bacon slices on top; layer with two paper towels. Repeat with remaining bacon and additional paper towels. Cook on High (100%) 5-7 minutes or until bacon is browned, rotating dish halfway through cooking; cool slightly.

Meanwhile, toast English muffins until golden brown and crisp. Spread each muffin half with 1/2 tablespoon sour cream. Break each bacon slice in half; place two halves on each muffin. Top with equal amounts of tomato, salsa and cheese.

Arrange 4 muffin halves on a microwave-safe plate. Cook on High (100%) 1 minute and 30 seconds or until cheese is melted. Repeat with remaining muffins.

Makes 4 servings
