Passover Toffee Bars

1 cup sweet butter
1 cup sugar
1 egg
1 tsp. vanilla
1 cup matzo cake meal
1 cup semisweet chocolate chips
1 cup chopped walnuts


Preheat oven to 350 degrees. Grease a 9x13 pan and set aside. In a large bowl of an electric mixer, mix butter and sugar on high speed until smooth, 2 minutes. Add egg and mix until combined. Stir in vanilla and cake meal and mix until combined.

Using a greased offset spatula, knife or fingers, press or spread batter to cover bottom of reserved pan (batter is quite thick but it will cover pan). Bake in a preheated 350 oven for 20 minutes or until crust is lightly browned around edges.

Remove pan from oven and sprinkle crust with chocolate chips. Place pan back in oven for 1 minute to melt chocolate. Remove from oven and spread melted chocolate to cover crust. Sprinkle with chopped nuts and set pan in refrigerator to set chocolate and cool. Slice into 2-inch squares when cooled.
