Jewish Apple Cake

8 cups apples, peeled and sliced
1/2 cup sugar
1 1/2 teaspoons cinnamon
3/4 cup oil
1 1/2 cups sugar
3 eggs
1 cup orange juice
1 teaspoon vanilla
1/4 teaspoon salt
2 teaspoons baking powder
2 1/2 cups unbleached all-purpose flour


Toss apples with the 1/2 cup sugar and cinnamon. Preheat oven to 350 F. Grease a 9x13" pan or a 10" spring-form pan.

Blend oil and sugar. Beat in eggs, then orange juice and vanilla. Fold in salt, baking powder and flour to make a smooth, soft batter. Spoon half of batter into prepared pan. Top with apples, then remaining batter.
Bake until cake is crusty and set on top, about 45 minutes.

Serves 10-12
