Dessert: Honeyed Apple Cake

Honeyed Apple Cake
Makes 1 - 9 or 10 inch tube pan

2/3 cup butter, softened
3/4 cup packed brown sugar
3 eggs
3/4 cup honey
2 teaspoons lemon zest
1/2 cup strong brewed coffee
2 cups all-purpose flour
1 1/2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
2 cups apples, peeled, diced
1/2 cup coarsely chopped walnuts


Cream the butter and brown sugar. Beat in eggs. Add honey, lemon rind and coffee.
On wax paper, mix together flours, baking powder, baking soda, salt, cinnamon and nutmeg. Add to creamed mixture. Stir in apples and walnuts.

Turn batter into a greased and floured tube pan. Bake 350° for 1 hour and 10 minutes, or until it tests done with a toothpick. Let cool on a rack.

Makes 16 servings.
