Honey Cake by Mary
1 cup sugar
1 cup honey
3 eggs
3/8 (three-eighths) cup oil
5/8 (five-eighths) cup warm coffee
1 1/2 tsp. soda
3 cups flour
1/2 tsp. salt
1 tsp. allspice
1 tsp. cinnamon
1 cup chopped nuts
1 cup raisins
Preheat over to 350 degrees. Grease sides and bottom of 9 x 13 pan. Line pan with parchment paper and grease paper.
Combine sugar, honey, eggs, oil, coffee and soda in large bowl of mixer until well blended. Add flour, salt, allspice and cinnamon. When well combined, stir in nuts and raisins.
Bake 50 - 60 minutes or until cake tests done.
