Apple Butter

Apple Butter

6 lbs apples
1c water
1/4 c bottled lemon juice
3 c granulated sugar
3 c brown sugar
1/2 c apple schnapps liquor
1 tsp cinnamon
1/2 nutmeg
1/4 tsp allspice
1/4 tsp cloves


Peel, core and slice apples into water. Cook, covered for 10 -15 minutes.

When apples are soft, process until smooth or put through a food mill.

Put the puree in a pan with lemon juice and the rest of the ingredients. Stir to blend and heat to boil. Reduce heat to low and simmer uncovered until very thick and spreadable. Stir occassionally to prevent sticking to the bottom of the pan.
