Maggie's Irish Wheaten Bread

2-3/4 cups whole wheat flour (divided 2-1/2 + 1/4)
1-1/2 tsp. baking soda
1 tsp. salt
2 tsp. sugar
1-1/2 cups buttermilk


Preheat oven to 350 degrees. Butter and flour an 8-1/2 x 4-1/2" loaf pan.

In a large bowl, whisk together 2-1/2 cups of flour with baking soda, salt and sugar.
Add buttermilk all at once and mix with a spoon until thoroughly combined. Add remaining 1/4 cup flour and stir until combined and dough holds together in a ball.
Turn out onto lightly floured surface and gently knead with lightly floured hands to shape dough into shape of pan. About 6 or 7 strokes.

Place dough in prepared pan and bake 45 to 50 minutes. Turn out onto wire rack to cool. Serve warm or at room temperature.

NOTE: make also be made in a ball shape in an 8" circular pan.
