Vegetable: Cauliflower Masala

Cauliflower Masala

1 medium cauliflower, cut in 1/2" florets
2 medium potatoes, cut up
4 T vegetable oil
1 t cumin seeds
1 large onion, sliced (?)
1/2 t ground turmeric
1 t ground coriander
1 t ground cumin
1/4 - 1/2 t chile powder
2 tomatoes, skinned and chopped
3/4 C warm water
1/2 C frozen peas
1 - 2 green chiles, seed and halved lengthwise
1 t salt to taste
1/2 t garam masala (available in Indian stores)
1 T chopped cilantro


Saute cumin seeds in the oil until they start to pop; add onioins; stir and cook 5 min until onions turn soft.
Lower heat; add turmeric, coriander, cumin and chile powder. Stir and cook 2 - 3 min. Add tomatoes. Cook, stirring, 2 - 3 min. Add potatoes and water, boil, cover and simmer until 1/2 cooked. Add cauliflower; cover and simmer until potatoes are tender - about 10 min. Stir in peas, chiles, salt and garam masala. Cover and cook 5 min. Stir in cilantro. Serves 4 - 6
