Chai Tea #1

1 Tbsp fennel seed
6 green cardamom pods
12 cloves
1 cinnamon stick
1 pc ginger root -- (1 1/4") sliced thin
1/4 tsp black peppercorns
2 bay leaves
7 cups water
2 Tbsp Darjeeling tea
6 Tbsp honey -- or brown sugar*
1 cup milk

Boil above ingredients (except Darjeeling Tea) for 5 minutes, steep for 10.


After simmering 5 minutes, add darjeeling tea.

Then add honey or brown sugar and milk.

Chai Tea #2

4 bags black tea
1 1/2 qt water
10 cardamom pods
2 cinnamon sticks
1 pinch black pepper
3 Tbsp sugar

Boil for 5 minutes, steep for 10. Strain and drink.

1 1/2 cups water
1 stick cinnamon -- (1") (1 to 1)
8 cardamom pods
8 whole cloves
2/3 cups milk
6 tsp sugar
3 tsp loose black tea (preferably Ceylon or
Assam)

Put what in pan. Add cinnamon, cardamom, and cloves. Bring to a boil. Trun heat to low and simmer 10 minutes. Add milk and sugar and bring to a simmer. Throw in tea leaves, cover and turn off heat. After 2 minutes, strain and serve.

Basic Chai Tea

1 cup milk -- or less
2 cups water
1 Tbsp loose black tea
1 tbsp honey
1 drop vanilla extract
1/2 tbsp cardamom
1/2 tbsp cinnamon
1/8 tbsp ginger
a few whole cloves

Place all ingredients except milk in a small saucepan. Simmer for a few moments. Add milk. Simmer for a moment. Strain. Drink.
