3 lbs. round steak, trimmed and pounded to 1/4 inch thick cut into about 6 squarish pieces
German or other hot mustard
1/4 cup chopped onion
6 slices bacon, minced
3 Tbs. minced parsley
6 Kosher, garlic dill pickle sticks
flour
2-3 Tbs. lard (or other fat)
1 small carrot sliced
1 stalk celery
1 small onion or leek, sliced
2 cups beef broth or water and bouillion
2 Tbs. butter mixed with 4 Tbs. flour


Lay meat flat on a work surface. Spread each with mustard, bacon, onion, parsley and lay a pickle strip on each. Roll up and secure with string or toothpicks. Roll in flour and brown in fat in a pan wide enough to hold them in 1 layer. Add vegetables and stir to soften. (remove meat if necessary).

Add broth and simmer for about 1 hour or until meat is very tender. Remove meat. Thicken broth with butter and flour. Taste for seasoning and strain over meat rolls. top with more minced parsley if desired.
