German Potato Salad

3 lb. potatoes
1/4 c. chopped bacon
1 chopped onion
2 Tbsp. all-purpose flour
salt
pepper
3 tsp. sugar
2/3 c. vinegar
1/3 c. water
chopped parsley


Cook potatoes in skin in salted water until tender (about 20 minutes). Peel and slice thinly. Place in large dish.

While the potatoes are cooking, prepare the sauce for the salad. Fry the bacon pieces until crisp. Add onion and fry with the bacon for about a minute. Stir in flour and spices. Add the vinegar and water. Simmer the sauce for about 10 minutes before pouring over the potatoes. Top with chopped parsley. It is good served cold or warm
