Dessert: Bienstich Almond Cake

Bienstich Almond Cake

dough:
125 g (1/2 cup) butter
75 g (3/8 cup) sugar
2 eggs
300 g (2-1/4 cups) flour
pinch of salt
1 tsp baking powder
some milk, if necessary
1/2 tsp almond extract (optional)

topping:
200 g (7/8 cup) butter
200 g (7/8 cup) sugar
1 tsp vanilla
2 Tbs milk
2 Tbs honey
200 g (3 cups) sliced (or slivered) almonds


Dough: cream butter and sugar; add eggs and mix thoroughly.

In a separate bowl, mix flour, salt and baking powder. Add flour mix to butter mix and stir to combine. Add a bit of milk if necessary to make a dough which can be spread in 9"x13" ungreased pan. Bake at 350° until very light brown (about 20 minutes).

Remove from oven and cover evenly with the topping.

Topping: melt butter, remove from heat and stir in the sugar, vanilla, milk and honey; add the almonds and stir gently to coat. Spread topping evenly over the baked bottom and bake another 10 to 15 minutes at 350° until the almonds are a lovely golden colour.
