Apple Cheese Bread

2 cups flour
1/2 tsp. Baking soda
1 tsp. Salt
1/2 tsp. Baking powder
1/2 cup shortening
2/3 cup sugar
2 eggs
1 cup unpeeled apple, very finely chopped
1/2 cup grated sharp cheese
1/4 cup chopped nuts


Preheat oven to 350 degrees F. Sift together the flour, soda, salt and baking powder.

In another bowl, cream shortening with sugar until light and fluffy. Add eggs, one at a time and beat about 1 minute after each. Add apple, cheese and nuts.

Add dry ingredients in 2 portions, mixing only enough until mixture is dampened. Turn into greased 9x5x3 loaf pan. Push batter up into corners of pan, leaving center slightly hollow. Bake for 1 hr, at 350 degrees.

Makes 1 loaf.
